Breakfast Prep for the week

So every few weeks I make a tray or two of breakfast enchiladas : I put them in twos .

I use a large can of enchilada sauce with a dash of cream .

Potatoes

Chorizo

Egg

Cheese

Pour the sauce in tray then make the tortillas full with ingredients roll them up and place them on tray . When tray is full I cover them up with sauce and then pack with cheese .

Then just heat them up when I need :)
