Dinner: Mediterranean Stuffed Onions

This was a dinner that my mom made the other night. It was extremely delicious. It had so many good flavors. I don’t have the exact recipe for this one that my mom made since she made it her own way to fit her low carb diet plan. What I do know is that it is called Mediterranean Stuffed Onion dish. It’s a cuisine that has individual onion layers stuffed with rice, meat, veggies and herbs. Make a broth and pour over onions, cover the pot and bake them until the sauce is fully absorbed into the rice and the onions are tender. I can tell you that my mom used veggies along with meat and cauliflower rice with, seasoning, a little bit of chipotle and tomato paste for the filling then drowned the onions in a tomato paste broth mixture and covered with foil paper to bake. They came out so flavorful. Give this one a try.
