Seared Catfish

- Catfish (fresh or frozen)

- Cajun seasoning

- Black pepper

- Blackened seasoning

- Creole (no salt )

- Paprika

Coat fish in oil and add seasoning, very generous amount. Heat your skillet on medium/low heat, add a few sticks of butter and oil and let it heat up. Once the butter is melted, add the fish face down first for 3-5 minutes! Flip fish and repeat on the other side, reduce heat to low add 2 more slices of butter to pan. Cover skillet with the lid and let it simmer for 5-7 minutes! You can add lemon! Garnish it to your liking, ENJOY!
