Fried rice

I wanted fried rice but honestly didn’t want to drive. So I made my version of fried rice, and it was delicious!

Cook your white rice & stick in the fridge.

I used instant rice, then stuck it in the freezer for an hour.

You NEED cold white rice for fried rice (keeps it from being mushy). Day old rice is PERFECT for fried rice!

3 eggs whisked

4 cups of COLD rice

Oil (I used canola)

Butter

Onion

Bag of frozen peas and carrots (I used a thing of mixed veggies and picked out green beans, but kept the corn)

Soy sauce

4 cups of cold cooked rice

3 egg, whisked/scrambled

▢ 1/2 cup chopped carrots, fresh or frozen

▢ 1/2 cup peas, I use frozen

▢ 1/2 cup white onion, chopped

▢ 4 tablespoons half stick unsalted butter, softened

▢ 2 tablespoons low-sodium soy sauce

▢ 2-3 tablespoons peanut, canola, or vegetable oil
