An easy side dish🍽️

Fair warning: this is not the healthiest thing you will ever eat, but it’s so so good. In my house we call these “moneditas de platano,” which is like plantain coins.

This is a super easy side dish. All you really need is a plantain, a hot pot of oil, and some salt.

+ You peel and dice your plantain

+ Heat up a pot of olive oil

+ Insert your little coins once the oil is really hot. Be careful with splashing when you drop the coins in there because you don’t want that hot oil to burn you.

+ When the coins are nice and golden floating at the top, you can remove them from the pot.

+ Place them in a bowl with a paper towel along the bottom to catch some of that excess oil.

+ Sprinkle some salt on them.

+ Serve.

PRO TIP: The greener the plantain, the crunchier you can make them, and the yellower the plantain, the sweeter they will be.

For this specific meal, I served them with some white rice and chicken.

P.S. Don’t judge the lack of greens lol.
