Carrots will keep growing and reseed themselves!

Carrots can be left in the ground indefinitely. If you want to eat them, I would harvest before it starts warming up and the end of winter.

The magic happens if you don't harvest, and let the carrots wake up in the spring. The carrot top will put out bloom stalks that look gorgeous and act as a host plant for Black Swallowtail Butterflies 🦋.

The blooms will set seed and you can get several hundred seeds per plant. I'm so in love with how this looks that I'm going to add a couple carrots to my flower beds.
