These Chipotle Chicken Avo Melts are crunchy, high in protein and fiber, and seriously so satisfying!
Ingredients needed:
○½ cup Plain Greek Yogurt, or 1/3cup Mayo
○2 Chipotle Peppers in Adobo Sauce,finely chopped
○Juice of 1 Lemon
○1 tsp. Garlic Powder
○Salt & Black Pepper, to taste
○4 slices Avocado Bread by TheAvocado Bread Co., or any other choice of bread
○1 cup Rotisserie Chicken, shredded
○1 Avocado, sliced
○2 slices Provolone Cheese, or sliced cheese of choice
○1 cup Baby Spinach, or arugula
○2 tbsp. Olive Oil, or butter
Steps:
1. In a small bowl, combine theyogurt, finely chopped chipotles, lemon juice, and garlic powder. Mix well.Season with salt and black pepper to taste.
2. On two slices of the avocadobread, add a generous slather of the chipotle sauce.
3. Evenly distribute the shredded chicken, spinach, sliced cheese, sliced avocado, and then sandwich with the topbread slices.
4. Drizzle a skillet over medium heatwith olive oil, then add the sandwiches to cook 2-3 minutes on each side, untilcrisp and golden brown. Enjoy warm!
