vegan pumpkin snickerdoodle cookies

made these as my little housewarming bake for the new apartment when I moved in a while ago, and posted them on the IG but not here! here’s the recipe:

in a large bowl, cream together 1/4 cup room temp vegan butter with 3/4 cup sugar. then add in 1/4 cup pumpkin purée with 2 tsp of vanilla, and mix once more.

to the same bowl, sift in 1 cup of flour with 1 tsp baking powder, 1 1/2 tsp pumpkin spice and a pinch of salt. mix until just combined and then chill the dough for 45 mins.

while the dough is chilling, make your sugar mixture using 1/4 cup sugar with 1/4 tsp cinnamon and 1/4 tsp pumpkin spice. when the dough is ready, roll into balls and then coat in your mixture.

bake cookies at 350 for 15 mins, let cool, and enjoy 🎃🍂✨
