Monday: chicken flautas from Costco with an elote salad from Trader Joe’s 🌯 🥑 These flautas are the perfect quick dinner. We throw them in the air fryer and they are ready by the time we set the table!

Tuesday: eggplant parm with pasta and Caesar salad 🍝 🍆 My husband’s favorite dish is eggplant parm. He approves of this frozen eggplant parm dish from Target. It takes an entire hour in the oven but is worth the wait!

Wednesday: tacos and nachos 🌮 🌮 we decided last minute to go out to our favorite Mexican restaurant. I went with my usual baja shrimp taco plate. We also decided to try something new - carne asada nachos! It was all delicious!

Thursday: sushi 🍣 I took myself out for a solo date night while my husband went to dinner with coworkers. I picked sushi up from Sprouts (along with an Olipop). I ate my sushi in the park while coloring in my planner. After, I got Handel’s ice cream!

Friday: peanut Thai chicken curry bowl 🍚 🥜 🥦 I wanted a quick dinner because I was doing some baking for a fun Saturday event. I cooked up some chicken and tossed it in a can of peanut curry sauce.

Saturday: TomTom restaurant!!!! Where are my VPR peeps at?! Some friends were visiting from out of town so we went to TomTom in LA after a day poolside in Santa Monica. We ordered a bunch of items on the menu and shared. Everything was fabulous! We had crispy chicken sliders, flatbread, truffle fries and crispy zucchini.

Sunday: surf and turf dinner 🥩 🥔 🦞 we celebrated my grandpa’s 75th birthday with a fancy dinner! I was the one that cooked the lobster, and it turned out great. The best part? The homemade cupcakes I made for dessert.
