Hey everybody!

In my last post, I made a homemade kimchi recipe. It’s a lot of kimchi, like over 6 lbs!

To utilize this kimchi, there are so many recipes that you can make with it. I will feature those recipes as we go along but this recipe that I’m showing you today is one of my favorites, kimchi fried rice!

It’s also budget friendly.

You can make this kimchi fried rice with any protein. You can use fried eggs, veggies (yes they have protein 😉) shrimp, chicken, tofu, anything you enjoy.

I made it with Saeu-jeot (salted shrimp) because I just wanted something very quickly made.

This recipe if great for when you want something quick. I made this for dinner and saved the rest for my lunch the next day. It tasted delicious for lunch too.

Below are the ingredients you need to make this recipe. Most of them you can find at the grocery store.

If you did not make homemade kimchi, that’s fine! Just buy some at a place that sells it like Trader Joe’s, WholeFoods, ShopRite, ACME, 99 Ranch, HMart, etc.

This recipe yields 4 to 5 servings

INGREDIENTS

2 Cups of Uncooked Rice

2 + 1/4 Cups of Water

4 TBSP of cooking oil

2 Carrots, Chopped

1/4 White onion, diced

2 Cloves of garlic, minced

1/4 Saeu-jeot or 1 Cup Protein of Choice

1 TBSP of butter

2 TBSP of gochujang paste

1 CUP of Kimchi

2 TSP of sesame oil

1 TBSP Sesame Seeds

1 Pack of Seaweed Snack

2 Green Onion Stalks, chopped and separated by white and green parts

DIRECTIONS

Prep Rice

1. Wash and drain white short grain rice until the water isn’t foggy anymore.

2. Add rice into rice cooker and add 2 + 1/4 Cups of water to 2 Cups of rice.

3. Cook on the white rice setting on your rice cooker or cook for 30 minutes.

Prep Veggies

1. Dice carrots and white onion. Mince garlic and slice green onions.

2. Gather 1 Cup of Kimchi.

Cook

1. On medium heat, add cooking oil.

2. Stir fry garlic, green onion (white part ), carrot, and white onion. Push to side.

3. Add a TSP of oil and then protein of choice. Cook and push to side.

4. Add cooked rice, gochujang, kimchi, and butter. Stir fry altogether.

5. Add seaweed, green part of green onion, sesame seeds and sesame oil.

6. Mix altogether and serve as is or with more entrees.
