Hi friends, today I'm gonna share about one of my favourite homecooked dishes that you can try making!
This is so easy and fuss-free, and it's perfect for a quick weekday meal.
Ingredients:
- 1 pack silken tofu
- 2 shiitake mushrooms (can be dried or fresh)
- 3 prawns (can be frozen or fresh, frozen is easier to handle!)
- 1 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tsp rice wine vinegar
- 2 eggs
- 2 tbsp chopped spring onions
Recipe:
Step 1: Prep your mushrooms and prawns*.
If using dried mushrooms, rehydrate in water. For fresh prawns, deshell them. For frozen prawns, thaw them.
*If you don't wanna use both mushrooms and prawns, you can do all mushrooms OR all prawns!
Step 2: Slice tofu into 5 slices and place them in a plate. Top each piece with either a mushroom or prawn.
Step 3: Make egg mixture - mix together 2 eggs while measuring the weight and pour in the same amount of water. (If your 2 eggs weigh 100g, add 100g of water, if your 2 eggs weigh 110g, add 110g of water).
Step 4: Pour egg mixture into the plate, steam the dish for 12-15 minutes until eggs are set.
Step 5: Make sauce by combining 1 tbsp dark soy sauce, 1 tbsp light soy sauce, 1 tsp rice wine vinegar.
Step 6: Pour sauce over steamed egg & top with spring onions. Serve with rice and enjoy!
This is so easy to make and really healthy as well - and it's SO COMFORTING, you'll definitely make it over and over again.
Don't forget to bookmark the recipe to try it out, and let me know how it went! 🥰
