Typically this dish is called Tres Golpes and comes with fried salami as well. However, I’m pescatarian so I make this dish without.
Ingredients :
• Green Plantain
• Avocado
• Eggs
• Red Onion
• Queso de Freir / Halloumi
• Butter
• Vinegar
• Salt
• Garlic Powder
• COLD Water
The star of the plate here is ✨MANGÚ✨
Mangú :
1) Grab a couple of green plátano (plantains) and yes, they must be green!
2) Start by cutting the ends, and cut a slit down the center. Wedge your fingers under the peel and start to remove the peel. Slice into big chunks.
3) Fill a pot with water and put on med-high heat. Then add your plátano! You want them to boil for about 30 minutes or until very tender.
Halfway through, salt your water.
4) Once tender, grab a cup and reserve some of that water because you’re going to add this to the mangú later.
5) Remove your plantains and add them to a bowl, add a generous amount of butter and begin to mash.
6) Add in some salt and garlic powder.
7) Add in some nice COLD water! This is the trick to yummy Mangú. * MASH MASH MASH *
8) Add a dash of your pickled onion juice and WAHLAA ✨ You now have a creamy, delish Mangú.
Pickled Onions :
1) Slice your red onion into pretty thin slices.
2) Add them to a bowl with vinegar and salt.
3) Set aside for a a few moments while you’re prepping your plátano.
4) Add to a sauce pan on medium heat and cover.
5) Allow to cook for about 5 minutes or until they turn dark red/translucent.
6) Use a dash of juice in your mangú.
