Is your toddler getting picky? Cause mine is. & forcing food on him is obviously not the solution cause it just makes it worse.
Instead I’m trying healthy recipes, and anything that he does like I make in bulk.
My toddler could live off of bread everyday of his life, one of he’s favorites is banana bread.
So I took the classic banana bread recipe, added more nutrients (carrots, spinach, hemp seeds) & baked them into individual muffins.
The came out so spongey, moist & delicious 😋
INGREDIENTS:
2 cups oat flour
2 bananas
2 eggs
2 cups spinach
1 cup matchstick carrots
1/4 cup hemp seeds
3/4 cup milk
3/4 plain Greek yogurt
4 tbsp honey
1 tsp vanilla extract
1 tsp baking powder
1 tsp cinnamon
DIRECTIONS:
•In a blender you’re going to add your bananas, eggs, spinach, carrots, milk & yogurt.
•In a large bowl add the flour, baking powder, hemp seeds, cinnamon, honey, and vanilla extract. Add your blended mixture to the bowl & mix well.
•Divide the batter evenly in a 12 count muffin pan and bake at 375° for 25-30 minutes.
BULK FREEZING: place all your muffins on a flat baking sheet and flash freeze them for 30 minutes. Then add them to a freezer safe Ziploc bag and they will be good for 3 months.
When you want to serve onto your toddler, just popped them in the microwave for 30-45 seconds.
