I had an idea to create an easy cereal bar with a baklava-vibe, complete with crunchy cereal, honey, crushed pistachios, and walnuts. i grew up eating baklava so this is a special treat! It’s super simple to make (takes no time at all) with minimal ingredients, and I just cannot emphasize enough how AMAZING these are as a sweet snack or easy gluten-free & dairy-free dessert. I am exciteddddd about this!! I know you’re going to be obsessed.
Ingredients
1/2 cup peanut butter or cashew butter
1/2 cup honey, plus extra for drizzling on top
1 tsp vanilla extract
1/3 cup pistachios, crushed
1/4 cup crushed walnuts
2 cups cereal
1/4 tsp cinnamon
In a medium bowl, mix together the peanut butter, honey, and vanilla extract together. Add the cereal, crushed pistachios, walnuts, and cinnamon - mix to combine. Drizzle with extra honey. Transfer to a lined 9x5 loaf pan and place in the freezer until firm, about an hour. Slice into bars, and enjoy!
