Here’s a few of my simple go-to meals this past week!
🥒Veg Sushi + Fresh Spring Rolls are such a delicious way to get lots of veggies in!
🍠Curried Chickpeas + Sweet Potato
Added 2 peeled & cubed sweet potatoes to a pan over medium heat with 1/4 cup water + a can of rinsed and drained chickpeas. Sprinkled them with curry powder, turmeric, garlic powder, paprika + salt. Covered and allowed to cook for 5-7 minutes or until sweet potatoes were soft.
Toasted a slice of sourdough for avo toast + topped everything with crushed red pepper & lemon juice🍋
🥕Pan Fried Tofu + Asian Slaw
(I have a tofu recipe on my previous post)
The slaw I made with:
1/4 red cabbage , sliced
1/2 English cucumber, cut into 1/4s
About 1/4 cups of broccoli sprouts (you could use bean sprouts)
1 large carrot, cut into tiny sticks(or buy shredded carrots)
sauce: 2 tbsps soy sauce, 1 tbsp ACV(or rice vinegar), 1 tbsp sweetener (I used brown sugar) a lil drizzle sesame oil, dash crushed red pepper, garlic powder + ginger powder.
*Also add cilantro if you have it!
Combine everything and top with sesame seeds when ready to serve.
