Gluten Free, High Protein Buffalo Chicken Quesadillas W/ Homemade Jalapeño Ranch
These are so quick and easy to make, packed with protein, and the sauce is TO DIE FOR!
INGREDIENTS:
Quesadillas:
4 gluten free tortillas - I used @siete
1 lb cooked shredded chicken - I used @trifecta from my meal prep plan
1/4 cup plain nonfat Greek yogurt
1/3 cup buffalo sauce - I used @primalkitchen
1 tbsp parsley, dried
1 tsp dill, dried
1 cups shredded romaine lettuce
1 jalapeño diced & seeded
3 green onions, chopped
1 cup shredded cheddar cheese
For the jalapeño ranch (optional):
1 cup plain nonfat Greek yogurt
1/2 cup fresh chopped cilantro
1 tsp garlic powder
1 tsp onion powder
1 jalapeño (most seeds removed)
juice from 1 lime
INSTRUCTIONS:
1. In a bowl, combine the chicken, yogurt, buffalo sauce, parsley, and dill.
2. To make the ranch, combine all ingredients in a food processor.
3. Assemble - divide the chicken, jalapeño, green onions, lettuce, and cheese among 4 tortillas top with remaining 4 tortillas.
4. Heat a drizzle of olive oil in a skillet, add 1 wrap and cook 2-3 minutes per side until crisp and golden brown. Optional - sprinkle some cheese on the pan first to get a cheesy quesadilla crust! Serve warm with extra jalapeño ranch, Buffalo, and lettuce if desired.
