Perfect for fall!!

OLIVE GARDEN CHICKEN GNOCCHI SOUP

A healthier, allergy friendly version of this favorite! Perfect for fall and BLW friendly too. Recipe below!

1 cup cooked chicken (diced or shredded)

1 cup chopped onion

1 cup chopped celery

1 cup shredded carrots

1 tbsp fresh thyme

1 cup chopped fresh spinach

2 cups coconut milk

2-3 cups chicken broth

16 oz package chickpea gnocchi

1 tbsp minced garlic

1/4 cup gluten free flour

1/4 cup olive oil

Salt and pepper to taste

Start by prepping your ingredients because this recipe goes fast lol.

Sautée your garlic, onion and celery in a large pot with your olive oil until softened. Add in the flour and stir together. Add in the coconut milk and chicken broth and stir. Add in the spinach, chicken, carrots, thyme, and gnocchi. Let everything simmer until the gnocchi is cooked to your liking. (About 5-10 minutes)
