Everything I ate today in my weight loss journey! I’m all about quick and easy meals that are still packed with flavor. Hope you find some meal inspo if you’re also on your weight loss journey or just looking for quick and easy meals to put together!
Coffee (75 calories) ~for today’s coffee, i brewed some nespresso in the melozio flavor and topped it off with some frothed oat milk and a splash of skinny syrup in vanilla (zero calorie coffee syrup)
Lunch: Vegan Filipino Lumpia Recipe (585 calories) ~ Lumpia is a popular filipino dish. These are very similar to egg rolls, made with a type of protein and packed with veggies. I opted for a vegan version made with impossible “meat.” These were SO good. Full recipe on how to make these are on my page
Snack: Granola Yogurt Bowl (260 calories) ~ A quick and easy afternoon snack. I made my bowl with ½ cup low fat vanilla yogurt, ¼ cup of granola with dark chocolate, ¼ cup strawberries and a drizzle of honey on top!
Dinner: Salmon bowl (420 calories) ~ I love a quick and easy dinner that I could just throw in the oven! This took under 30 minutes to put together. I roasted my veggies in the same pan as my salmon and served over some white rice
