【斋鱼翅】

VEGGIES SHARK’S FIN SOUP

🥬INGREDIENTS:

~ Lotus’s dried condiment (glass noodles, shiitake mushroom, dried wood ear mushrooms, beancurd skin) soaked and shredded

~ Chinese cabbage, carrot, tofu

~ Lotus’s enoki mushroom

~ Lotus’s crab flavoured filament sticks

~ vegetable broth/mushrooms water

~ cornstarch water (thickening)

🧂SEASONING:

Vegetarian oyster sauce, soya sauce, white pepper, sesame oil, black vinegar

👩🏻‍🍳INSTRUCTIONS:

1. Rehydrate the dried shiitake mushrooms and wood ear mushrooms until they're soft.

2. Heat vegetable oil in a pot, add garlic and shallots sauté until fragrant.

3. Add in the shredded shiitake mushrooms, carrots and wood ear mushrooms sear them.

4. Pour vegetable water/ mushroom water into a pot and bring to boil, add in shredded Chinese cabbage, glass noodles, and beancurd skin.

5. Add in seasoning according to your taste.

6. Simmer for about 10 minutes until the vegetables are tender. Then, add in enoki mushrooms, crab sticks and tofu.

7. Slowly pour the cornstarch slurry until the soup thickens slightly.

8. Serve with white pepper and black vinegar.
