Blueberry Swirl Iced Coffee (DIY Starbucks Recipe)

Blueberry compote ingredients (yields 2 servings):

馃珢 1 cup of blueberries, fresh or frozen

馃珢 录 tsp honey

馃珢 陆 tsp vanilla extract

Drink ingredients:

鈽曪笍 8 oz coffee (recommended to use Starbucks Spring Day Blend), brewed and cooled

鈽曪笍 3 tbsp blueberry compote

鈽曪笍 1 tsp sugar (or more to taste)

鈽曪笍 戮 cup ice

鈽曪笍 4 oz milk (recommended to use 2%)

Instructions:

1锔忊儯 Make blueberry compote by cooking the blueberries, honey, and vanilla in a small saucepan for 3-4 minutes over medium-high heat, until the blueberries have broken down. Then, let the mixture cool slightly before blending in a blender or immersion blender. Set aside.

2锔忊儯 Take out a 16 oz glass and pour blueberry compote in. Then, sprinkle with desired amount of sugar and top with ice (I forgot to do this so the ice isn鈥檛 in the pictures till the end!)

3锔忊儯 Froth milk to create cold foam using an aerator or handheld frother (my Ninja coffee maker comes with a mini frother attached so that鈥檚 what you鈥檒l see in the pictures.)

4锔忊儯 Pour cold foam into the glass on top of the blueberry compote, then fill the glass with coffee.

Commentary:

As soon as I saw the picture of this drink on the Starbucks site, I knew I had to try it! I make fruit compotes often for my baked goods, so this was a pretty easy recipe for me to make, but it鈥檚 definitely more time-consuming if you鈥檙e making a compote for the first time. I would recommend making the compote the day before so that you can quickly assemble the drink in the morning.

I loved the taste of the blueberry compote, the cold foam was fun to drink, and I enjoyed my coffee (even though I didn鈥檛 use the recommended Starbucks blend.) But truthfully, I didn鈥檛 feel like all of the flavors came together in a cohesive way. Perhaps it was because I didn鈥檛 blend my blueberry compote enough, but when the compote was mixed into the coffee, I still mostly tasted coffee with some sporadic bursts of blueberry here and there. It was enjoyable to drink, but maybe not as exciting as the Starbucks picture made it out to look if I鈥檓 being honest 馃槄 Fun to try though!
