i just recently went gluten free on top of being dairy free. i do not have celiac, so i recognize that my options are not as limited!

i have ibs, so i chose to restrict my diet to help alleviate some of my symptoms. i love cooking and also follow a whole foods diet, so i make a majority of my food at home. i've honestly enjoyed the challenge of making my normal recipes gluten free.

most of my breakfasts follow this format: high in protein, a whole grain, and carbs in the form of fruits and veggies.

peanut butter + jelly rice cakes:

i took a couple of my bagel recipes and substituted them with rice cakes. one of my faves is peanut butter and jelly.

+ rice cakes

+ peanut butter

+ local or homemade jam or fresh fruit

+ serve with yogurt for more protein

breakfast bowl:

these are so diverse, you can really switch up the flavor palate depending on how you're feeling. i'll had maple syrup and cinnamon if i'm feeling sweet and savory, or spicy seasonings if i want a kick.

+ eggs

+ red or gold potatoes or brown rice

+ vegetables of your choice

+ add chicken, turkey, or beef for more protein

peanut butter honey + banana rice cakes:

these follow the same idea as the peanut butter + jelly rice cakes.

+ rice cakes

+ peanut butter or hazelnut butter

+ honey

+ banana

+ serve with yogurt for more protein

dairy free omelet:

+ eggs

+ vegetables of your choice

+ add chicken, turkey, or beef for more protein

+ serve with brown rice to add a whole grain

+ add nuts for more protein

egg scramble:

+ scrambled eggs

+ chicken, turkey, or beef

+ vegetables of your choice

+ quinoa

gluten free overnight oats:

+ soaked chia seeds

+ refrigerate overnight

+ serve with fresh fruit
