I let the chicken sit in a marinate overnight of lemon juice, garlic, onion powder, kickin chicken seasoning, salt, and some olive oil.

Then roasted over veggies of carrots, celery, and onions

seasoned the outside of the chicken and then basted with some butter every 30 mins or so to get that golden brown color.
