Ingredients
• 2 Sweet potatoes
• 1 12oz package frozen fine (skinny) green beans
• 2 chicken breasts
• 2 cups chopped kale
• olive oil
• garlic powder
• onion powder
• ground mustard
• sea salt
• black pepper
Directions
1. Preheat oven to 375°
2. Chop sweet potatoes into 1/2 inch cubes and place in microwave safe bowl. Microwave for about 5 minutes just to jump start the cooking process
3. Cut chicken into 1/2 inch cubes
4. Line sheet pan with parchment paper. Combine sweet potatoes, chicken, green beans with olive oil, 1.5 tsp garlic powder, 1.5 tsp onion powder, 1 tsp ground mustard, 1.5 tsp sea salt, 1.5 tsp black pepper. Mix directly on the baking sheet (we do this for easy clean up - don’t make it harder than it has to be🤫)
5. Bake for about 25 minutes, flipping the contents of the sheet pan with a spatula half way through and rotating the pan in the oven
6. Chop 2 cups of kale (or buy a bag of already cut kale - usually advertised for juicing). Add to baking sheet by lightly mixing it in to the rest of the contents and bake for another 10 minutes.
