The recipe was good, but I needed less sugar, more rise and a little spice! So I decided to modify this one and make it my own. It was really good!

1/4 cup butter

1/4 cup corn or avocado oil

1/2 cups sugar, plus 2 tsp

1 teaspoon vanilla

2 eggs (beaten)

3 ripe bananas, smashed (about 1 cup), plus 1 for decoration

1/4 cup milk

2 cups flour

2 tsp malted milk powder

1/2 tsp cinnamon

1/4 tsp ground nutmeg

1⁄2 teaspoon salt

1 teaspoon baking soda

1/2 cup chopped pecans (optional) or 1/2-1 cup walnuts (optional)

Preheat oven to 350°. Lightly grease a loaf pan with butter or oil. Set aside.

In a medium mixing bowl, add bananas, eggs, milk, butter, oil and vanilla. Stir to combine.

Add flour, malted milk, sugar, baking soda, cinnamon, nutmeg and salt to the bowl. Gently stir to incorporate dry ingredients into wet until just combined. Stir in nuts if using. Do not over mix.

Transfer batter to the loaf pan. Sprinkle on nuts (if using. Top with a banana sliced lengthways and sprinkle with remaining sugar.

Bake for 35-45 minutes, until golden and toothpick inserted in the center comes out clean. Remove from oven and allow to cool for 10 minutes before removing from the loaf pan. Allow to cool completely before slicing and enjoying!
