Lemon Rose Crème Brûlée—a dessert that perfectly balances the zesty brightness of lemon with the delicate floral notes of rose, all topped with a caramelized crust that cracks with every spoonful! 🍋🌹

🌟 Ingredients 🌟

2 cups heavy cream

1/2 cup granulated sugar (divided)

Zest of 1 lemon

1 tbsp rose water

1 tsp vanilla bean paste

5 egg yolks (room temperature)

1/2 cup granulated sugar (for topping)

🥄 Method 🥄

1️⃣ In a saucepan over medium heat, bring the heavy cream and 1/4 cup of sugar to a simmer. Remove from heat and stir in rose water and vanilla.

2️⃣ In a separate bowl, rub the remaining 1/4 cup of sugar with the lemon zest until fragrant. Whisk in the egg yolks until thick and pale.

3️⃣ Temper the egg yolks by slowly whisking in the hot cream, one spoonful at a time.

4️⃣ Pour the mixture into ramekins and place them in a baking pan.

5️⃣ Fill the pan with boiling water halfway up the sides of the ramekins, being careful not to splash water into the mixture.

6️⃣ Bake at 325°F for 40 minutes until the edges are set and the center is slightly jiggly.

7️⃣ Cool completely, then refrigerate for at least 2 hours.

8️⃣ Before serving, sprinkle a layer of sugar on top and torch until caramelized.
