Grilled Buffalo Chicken Quesadilla

Ingredients:
🍗 2 boneless, skinless chicken breast
🧂2 tsp olive oil
🧂 2 tsp salt
🧂 2 tsp pepper
🧂 2 tbs coconut oil
🌶️ 1/4 cup Franks Red hot sauce
🥄6oz Fage Total 0% Greek yogurt- nonfat
🧄 1 clove raw garlic
🍋 2 tbs lemon juice
🌱1/4 cup celery (chopped)
🌱1/2 cup onion (sliced)
🧀 1 cup light shredded cheddar cheese
🌮 6 wheat tortillas
To Prepare:
1. Drizzle chicken with olive oil. Season with salt & pepper.
2. Grill on med-high heat for 4 minutes on each side or until internal temperature reaches 160 degrees f
3. Once cool enough to touch, finely chop chicken. Add to mixing bowl with coconut oil and hot sauce. Toss to combine.
4. In a medium bowl, combine yogurt, garlic, lemon juice, & 1/2 tsp salt. Whisk until smooth.
5. Slice onion. Chop celery.
6. To assemble quesadillas, slather one side of each tortilla with a tbs of yogurt sauce. Top with chicken, onion, celery, & cheese. Fold in half.
7. Grill or pan fry w/ cooking spray until crispy.
