Ingredients for Rice🍚
- 1.5 cups Jasmine Rice
- 1 tbsp Knorr Chicken Bouillon
- 1 tbsp olive oil
- 2.5 cups water
Instructions
1. In a medium pot heat 1-2 tbsp olive oil on medium heat
2. After washing your rice, mix rice in the oil until slightly toasted (1 min)
3. Add in 2.5 cups water and bring to a boil
4. Once rice is boiling, cover and bring temperature down to the lowest heat
Ingredients for Beef🥩
- 1 lb ground beef
- 1 tsp each salt & pepper
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp cumin
Instructions
1. In a pan, add beef and cook until browned
2. Add all of the seasonings
3. Set aside
Ingredients for toppings🌽🍅🧅🫑🫘
- 3 small bell peppers, sliced
- 1/4 yellow onion, sliced
- 1/2 can corn
- 1 can mixed beans (I’m using kidney, black, & pinto)
- Pinch cilantro
- 1 Roma tomato, diced
Instructions
1. In a medium pan sauté peppers & onions until soft, fragrant, & slightly charred
2. Remove peppers/onions & add the corn
3. Cook the corn until soft & slightly charred
4. Mix beans and corn
5. Layer the rice, beef, beans & corn, peppers & onions, diced tomato, & cilantro
6. Drizzle hot sauce and sour cream on top
