my favorite new way to get my veggies in! i love regular fries, but sometimes my body wants something different, so these are an easy alternative!
βοΈYOU WILL NEED:
-one butternut squash
-one egg
-bread crumbs of your choice (I used Italian seasoned breadcrumbs because I wanted something thing but panko would work for a thicker layer too!)
-mayonnaise
-sriracha sauce
-(optional) paprika flakes
βοΈHOW TO MAKE THE FRIES:
1. cut squash into strips roughly one inch thick
2. beat one egg in a bowl
3. prepare a thick layer of breadcrumbs in another bowl
4. spray a baking sheet with nonstick cooking spray
5. dip the strips of squash into the egg, letting the excess drip off before coating it in the breadcrumbs
6. lay the strips onto the baking sheet, leaving a little room between
7. bake at 400 degrees for 15 minutes, or until the outside is hard & the inside is a little squishy! to air fry, cook at 400 for 8 minutes and then continue frying until they reach the right firmness!
βοΈHOW TO MAKE THE AIOLI
1. in a new bowl, mix 1/2 cup of mayonnaise with a drizzle of sriracha to taste (I used about two tablespoons)
2. add a dash of paprika (optional)
βοΈbenefits of butternut squash: powerful antioxidants, including vitamin C, vitamin E and beta-carotene
